Beef Tongue Tacos

You are here to learn how to transform a cow’s tongue, a very overworked muscle, into something tender and savory. Luckily this recipe does is as easy as it gets, and take very little time to prepare. As a matter of fact, you’ll spend more time make pico de gallo than this recipe for beef tongue tacos.

Street tacos are a favorite around here, which is why I keep the recipe as simple. Of course the lengua meat is the showstopper, but it’s the sides which elevate this dish.

Lengua Meat Tacos

When prepared properly tongue taco will melt in your mouth. Those who do not know it is tongue will never realize what type of meat your are serving. For this reason I like to keep the toppings to a minimal.

The perfect topping is as simple as mixing together, coarsely chopped cilantro (stem and leaves), white onions, and lime juice. There’s no need to add sour cream or cheese this tongue taco dish. Trust me, keeping it simple is the best way to go.

Individuals who seek a heartier meal should add homemade refried beans to the plate.

Taco de Lengua Recipe

This recipe consists of only 5 pantry ingredients, well, 6 if you count the beef tongue.

Ingredients

  • Beef tongue, 3 to 4 pounds
  • Red Onion, sliced
  • Garlic, 1 head cut in half
  • Bay leaves, 6 leaves
  • Whole Peppercorn, 4 tablespoons
  • Sea Salt, 2 tablespoons
  • Garlic Salt (optional)

Instructions

  1. Fill a large stock pot 3/4 full of water. Add beef tongue, red onion, garlic, peppercorns, and salt and cover.
  2. Bring to a hard boil and cook (at a hard boil) for 1 1/2 to 2 hours, making sure to not removing the lid.
  3. Once cooked, remove beef tongue and allow to cool until it can be handled.
  4. Peel the skin-like covering and discard.
  5. Slice the tongue into 1/2 inch slices. The meat should be tender and easy to slice.
  6. Next, cube the sliced beef tongue.
  7. Lightly coat the bottom of a pan with oil. Add cubed beef tongue and fry on medium low until the cubes have slightly browned. Add a dash of garlic salt to taste.

  • 3 to 4 pounds Beef tongue
  • 1 Red Onion, sliced
  • head of Garlic, cut in half
  • 6 Bay leaves
  • 4 tablespoons Whole Peppercorn
  • 2 tablespoons Sea Salt
  • Garlic Salt, optional

  7. Lightly coat the bottom of a pan with oil or home rendered lard. Add cubed beef tongue and fry on medium low until the cubes have slightly browned. Add a dash of garlic salt to taste.
