Ingredients
Meatloaf
- 2 tbsp 2 tbsp butter
- 1 (4 oz.) 1 (110 g) yellow onion, finely choppedyellow onions, finely chopped
- 1½ lbs 650 g ground beef or ground turkey or ground pork
- ½ cup 120 ml heavy whipping cream
- 2 oz. (½ cup) 55 g (120 ml) cheddar cheese, shredded
- 1 1 egg, beateneggs, beaten
- 1 tbsp 1 tbsp dried oregano or dried basil
- 1 tsp 1 tsp salt
- ½ tsp ½ tsp ground black pepper
- 7 oz. 200 g sliced bacon
Gravy
- 1¼ cups 300 ml heavy whipping cream
- ½ tbsp ½ tbsp tamari soy sauce (optional)

Making low carb simple
Instructions
Instructions are for 4 servings. Please modify as needed.
Meatloaf
Preheat the oven to 400°F (200°C).
Over medium heat, melt the butter in a frying pan. Add the onion and fry until soft, but not browned, and then set aside to cool.
Mix the ground meat in a bowl. Add in the fried onion and all the other ingredients, except the bacon. Mix well, but avoid overworking it because this can make the end result too dense.
Form into a loaf and place into a greased baking dish. Wrap the loaf in bacon.
Bake in the middle of the oven for about 45 minutes. If the bacon begins to overcook before the meat is done, cover with aluminum foil and lower the heat a bit. If the bacon doesn’t appear to be completely done, broil the meatloaf for approximately 5 minutes.
Gravy and serving
Save the juices that have accumulated in the baking dish, and use to make the gravy. Mix the juices and the cream in a smaller sauce pan.
Bring to a boil and lower the heat and let simmer for 10–15 minutes until it has the right consistency. If you want, use a little tamari soy sauce to taste.
Serve with freshly boiled broccoli or cauliflower with butter, salt and pepper or any other side dish of your choice.

Scott, I made this exactly to the recipe for 2 people and not 4, so half of the recipe too. It was absolutely delicious. 400F is very hot - 200C for us. I cooked it on 180C as 200C with a fan oven is very hot. Everybody's oven is different too. I also have an oven thermometer to make sure it is at the right temperature before I put anything into a fan oven. My bacon and everything came out perfect. I used streaky bacon as is normal in Britain, not thick back bacon.

I personally wouldn't use almond milk as there's no fat in it. Rather use ordinary full fat milk but less of it. Almond milk can be like water.

Made this recipe and it was amazing! Did not change much. Added some garlic with the onion, cause you can never have to much garlic 😋 And baked the meatloaf in a glass pan, to get crispy bacon all over. Broiled it at the end too. The sauce sounded weird. But it was amazing!!! I wish we had double the amount of sauce. It made the meal absolutely fantastic. Husband & kids loved it too.

This is absolutely my favorite! I usually make it with the sundried tomatoes and parmesan cheese that was in the tips section. I notice now that paragraph that showed alternative add-ins is no longer in the recipe. I miss having those ideas.

We haven't tried it that way, but you could certainly try a different type of cheese! Keep in mind that feta may create a different consistency than shredded cheddar.

I have never been fond of meatloaf but this recipe totally changed my mind. It was excellent! I needed more protein in my low carb diet and found you through watching Wes's Low Carb Meatloaf Battle. The only change I made was sautéing diced jalapenos with the onions for a little extra flavor. Surprisingly the jalapeno flavor was lost and the oregano was the crowning touch. YUM!
