And just like that… everything is Christmasy! Houses everywhere, decorated and sparkling with strings of lights. It seems that decorating was the popular thing to do this weekend, next to shopping. I’ve been seeing a ton of gorgeous tree pictures lately. We’re holding out for at least another week before decorating, which is a bit odd for us. Usually we decorate the day after Thanksgiving, but this year we got lazy. A good lazy, lounging together as a family. We ended up seeing the new Disney movie Moana… as I’m sure many others did too! The kids loved it. I honestly was expecting a bit more. Don’t get me wrong though, it was cute, but it just didn’t quite meet my expectations. Did you make it to the movies this weekend… or maybe get a chance to watch Gilmore Girls?!

We’ve now moved on from questions about when Thanksgiving is, to when Christmas is. It’s time for a countdown! When my oldest was in kindergarten, she came home around the holidays with a super cute paper chain and some typed up paper attached to the top. It talked about counting down the days until Christmas. You cut a single paper off every day and then you can visually see how much closer you’re getting to the big day. I may have to find that and whip up a 25 link chain with the kids today! I’m surprised that came to mind today instead of a few weeks from now…like has happened in the past! It’s nice to be on the ball! Do you do any fun countdowns leading up to special events or holidays?

The holidays mean sweets. Lots and lots of sweets! There are holiday parties for just about everyone and everything, which means an excuse not only to make sweets but eat them! It’s a season to indulge.

Whatever you do, don’t diet during the holidays. You’ll be miserable. Wait until January if you must. Until then…

Chocolate and cookies and so much more!

I love kiss cookies. An excuse to eat both a cookie and chocolate! But… why not make them even more incredible with extra chocolate?!

These are a chocolate lovers dream! Triple chocolate kiss cookies with a fudgy brownie like center and a crisp sugary coating. A perfect addition to any holiday party!

Ingredients

  • 3/4 C unsalted butter, softened
  • 3/4 C granulated sugar, divided
  • 1/2 C light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1/4 C unsweetened cocoa powder
  • 2 oz semi-sweet chocolate, melted
  • 2 C all purpose flour
  • Milk chocolate Kisses, unwrapped

Instructions

  • Preheat oven to 350°F. Prepare a baking sheet with a silicone baking mat or parchment paper. Add 1/4 cup granulated sugar to a small bowl, set aside.

  • In a microwave safe bowl, melt chocolate in 30 second intervals. Stir after each interval. Repeat until fully melted.

  • In a large bowl or stand mixer, beat together butter, 1/2 cup granulated sugar and brown sugar until light and fluffy. Mix in egg and vanilla, followed by salt and baking powder. Scrape bowl as needed. Mix in cocoa powder, followed by melted chocolate. Add flour one cup at a time, increasing after each addition. Mix until fully incorporated. If dough is too sticky to work with, chill for 15-20 minutes before continuing.

  • Using a small cookie scoop, scoop and shape dough into smooth balls. Roll in granulated sugar. Place sugar coated dough balls on prepared baking sheet, spaced 2 inches apart. Bake for 10 minutes. Immediately press an unwrapped chocolate kiss into each cookie. Immediately transfer cookies to a wire rack to cool completely and allow chocolate to set.

  • Once chocolate has completely set,cookies may be stored in an airtight container.

    I didn’t make it to the movies this weekend, but I did catch the Gilmore Girls and was disappointed with the first 3 episodes, almost didn’t watch the 2nd one but did so because of my daughter – but things got great in the 4th – which was the episode that left me wanting more! At least that’s my two cents.
    After reading your take on Moana I think I’ll wait for it to come out on DVD.
    Btw, I used to make kiss cookies all the time – but sadly forgot about them these past two years so thank you for reminding me – yes to chocolate and cookies and cakes during the holidays!

    Just made these…Absolutely delicious!!! Great chocolate flavor and not overly sweet. We used coconut sugar in place of granulated, and they came out perfect. My son doesn’t want to share them at the cookie exchange party tomorrow. Thanks for sharing this awesome recipe!

    I saw another recipe that I was excited to try but misplaced it! Your’s seems very close except for the addition of espresso powder. It was also filled with ganache. Yours looks great & I’m going to try it. Thanks for posting!

    I just made this batter and it seems awful crumbly which was surprising because after seeing your comment on chilling if to sticky. Any thoughts.

      Several things could have caused this. Either your measurements were off or you didn’t increase the speed to pull the dough together. This definitely is not a dry dough. Some doughs can appear crumbly while still being moist. In that case, you simply need to increase your speed. If mixing by hand, this will require more effort. However, the ingredients are correct as listed.

      Rachel, I had to let you know the cookies turned out wonderfully with a 1 to 1 gluten free flour. I used Krusteaz for these cookies. I don’t think they will last long enough to freeze. I plan to make a double batch next time. It is a perfect cookie to share with others. Thanks for the recipe!

    Hello from Greece!! can you please tell me how many grams is 2oz?
    Also can I use milk chocolate instead of milk chocolate kisses as I don’t know if we have such thing here in Greece. Thanks a lot!! Happy holidays!!

      2 ounces is equal to 58 grams. A thick piece of chocolate is best for the center. So, just be sure that you’re not using a thin piece as it will melt immediately after being pressed into the warm cookie. Enjoy! :)

    I don’t know what I did wrong , but my dough was very dry . Would not even stick together. My butter was a little melted, would that make a difference ?

      After the wet and dry ingredients have been combined, you’ll need to increase the speed and allow the mixer to bring the dough together. Depending on your location and if you’re beating by hand or in a stand mixer, you may have more success adding an extra egg. Others have done this and had great success.

    Well I just now realized I used an entire stick of butter too much, Yikes! Two instead of one. But they still came out great! No one knows the difference. And mine are actually not as cracked as yours in the picture. So idk. Maybe they need a bit more butter anyway.

    What did you use for the melted chocolate? Also, can I use melted semi sweet chocolate chips?

      I used a chocolate baking bar. If you’re careful, you could absolutely use chocolate chips as well. You may want to shorten your microwaving intervals between stirs though. Good luck! :)

      The amount will vary depending on how each person scoops. So, you may find they make more or less depending on that. My yield was 3 dozen cookies.

    This recipe looks AMAZING, but I am confused by one of the ingredients you have listed. How do you measure 2 ounces of melted chocolate? Do you measure before or after you melt the chocolate? Where do you get a 2 ounce measuring cup?

      The ingredient is listed as 2oz semi-sweet chocolate, melted. In this case, it’s referencing that you will need to melt the chocolate but measure it out beforehand. Typically using a bar of chocolate you’d be able to eye it down accordingly. If a bar is 8oz, you’d need a quarter of the bar, for example. Enjoy!

    You don’t have butter in ingredients…how much?

      Butter is the first ingredient listed. But for reference, you should use 3/4 cup unsalted softened butter.
