Cabbage Steaks are a delicious thick sliced cabbage that is then seasoned and drizzled with oil and roasted in the oven. This cabbage steak recipe is super simple prep, but also makes a great side dish, snack or even main dish.

Cabbage steaks are my favorite cabbage recipe. You will slice your cabbage into steaks, drizzle with oil and seasonings. Toss in the oven and allow your cabbage steaks to roast to golden perfection. The ultimate way to serve up this flavorful and hearty seasoned cabbage.

When you sauteed or roast cabbage you will find it transforms its flavor just like a Brussels sprouts. Rich and flavorful and bursting with incredible seasonings. While I love a good coleslaw, there is something about roasted cabbage that is unbeatable in terms of flavor.

  • Oil – Olive oil.
  • Cabbage – Green cabbage, 1-inch steak slices.
  • Salt
  • Black Pepper
  • Garlic Powder
  • Chili Powder

Variations To Recipe

Seasonings – Go right ahead and swap the type of seasonings you would like. I did a basic mix but feel free to use your favorite spices. Even a creole seasoning tastes delicious on this cabbage steak recipe.

Oil – If you don’t have olive oil, reach for avocado oil or even a canola or vegetable oil. The oil is going to help create crispy golden edges on cabbage and help it from sticking to the pan.

Step 1: Slice Cabbage Into Steaks

With a sharp knife you will slice your cabbage into 1-inch thickness steaks. This is going to be your steak size that will mostly hold shape and cook up perfectly in the oven.

Step 2: Season

Season with the spices and drizzle with the oil as directed. Do a single layer of steaks on a prepped baking sheet. I like to use a rimmed baking sheet.

Step 3: Roast in Oven

Roast the cabbage in the oven as directed. You will get a nice golden color on top and some smaller pieces can even leave a char look to the cabbage. Once done serve immediately!

Pro Tips

Season both sides of the cabbage. You will want to use a generous amount of seasoning as it will really enhance the flavor. I like to season my cabbage on the cutting board for the first side. Then transfer to the baking pan, and then season the top side.

Cabbage should feel heavy for its size. You also want to pick a cabbage that is brightly colored and doesn’t have a lot of looser leaves. That is very important. Green cabbage is going to work better over purple cabbage for this roasted cabbage.

Storing Leftovers

If you do not eat all of the baked cabbage slices simply store them in the fridge in an airtight container. The steaks will store for 2-3 days.

Reheat in the microwave for a quick reheat, or opt to reheat in the oven. Do 350 degrees F. Then place the cabbage back on a baking sheet and heat for 5 minutes or until warmed through.

Ways to Serve Roasted Cabbage Steaks

As Is – Serve as is for a main dish for a vegetarian or vegan. This is a great alternative to a meat protein.

Side Dish – Pair as a side dish to go next to a juicy steak (my favorite) or even some grilled chicken. It is tasty to pair with the cabbage and meat.

Rice or Pasta – If you want the cabbage to be the main event, serve over or with a side of rice or pasta. The cabbage will create tons of flavor and the pasta or rice will act as a filler.

1. Wash and remove any loose or damaged leaves.
2. Next you will use a sharp knife and slice 3/4-1″ thick slices from top to bottom.
3. Season, oil, and roast.

Can you freeze leftover cabbage steaks?

You can freeze leftover cabbage steaks if you want. Just know the texture of the cabbage will be very soft. You can use the leftover cabbage to just eat, or toss in soups and stews for added flavor.

Ingredients

  • 1 head green cabbage
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon chili powder

Instructions

  • Grease your baking sheet with cooking spray. I like to line my baking sheet with foil and then spray with cooking spray for easy cleanup. But that is optional.

  • Next you will rinse cabbage and remove any leaves that are tore or loose. Then slice from top to bottom in 1" thick round slices.

  • Place the cabbage steaks in a single layer on the baking sheet or on a cutting board.

  • Mix up the seasonings or add them on one at a time. Do both sides of the cabbage wedges. I season one side, then place the steaks on the pan and season the other side on the pan.

  • Drizzle the seasoned cabbage steaks with the oil and roast in the oven at 400 degrees for 15-20 minutes.

  • Then at this time flip the cabbage steaks and roast another 10-15 minutes or until the cabbage reaches your desired doneness.

Notes

Seasonings – Reach for any seasonings you like. A simple salt and pepper, creole, garlic salt and parsley, etc. Any seasonings work.

Thickness – Aim for 3/4-1″ thick on steaks. This is important so they hold shape. If they somewhat fall apart when you flip, it is okay, it will still taste delicious.
